INGREDIENTS: 

Sweet potatoes or yams
One quarter pound unsalted butter, at room temperature
A quarter teaspoon of ground cinnamon
3 tablespoons of honey

 

INSTRUCTIONS:
Set oven rack in the middle of the oven.  Place a sheet of aluminum foil on the rack below.This will prevent the syrup from the sweet potatoes getting all over your oven and provide easy cleanup.

Using a fork, prick eat sweet potato 2 to 3 times and then place them directly on the oven rack in the middle of the oven above the foil. Your oven should now be turned onto 425°. Bake for 45 minutes to one hour. If they are really large sweet potatoes, bake for an hour and 15 minutes. The best way to check Is to insert a knife into the center of each potato. If the knife goes in with out a lot of force the potatoes are done . The potatoes need to be very tender.

While the potatoes are baking make the honey cinnamon butter.
Combine all the ingredients in a small bowl and mix with a fork or you can use an electric mixer with the paddle attachment. Honey cinnamon butter is best served at room temperature.

When the sweet potatoes are completely cooked, remove the potatoes from the oven .  Without burning yourself slit each potato carefully and Fluff it up inside with a fork, then add the honey cinnamon butter, salt and pepper. Serve immediately.
